When I see leftover Rice in the refrigerator, I always try not to throw it away but repurpose it some other way. So I thought of making a new dish with that rice. I tried making fritters with this rice and it turned out to be a tasty crunchy starter which can be served as a side dish or a tea time snack.
Ingredients:
Left over Rice – 2 cups
Finely chopped Cilantro – 1/3 cup
Onion – 1 (Finely chopped)
Green Chilies – 2 (Finely chopped)
Turmeric Powder – ¼ tsp
Red Chilly Powder – ½ tsp
Gram Flour – 2 tbsp
Rice Flour – 2 tbsp
Salt – to taste
Cumin Seeds – 1 tsp
Oil – for deep frying
Method:
Heat the Oil in a deep frying pan in medium flame for deep frying.
In the meanwhile, combine all the ingredients except Oil, mash and mix well. Make small dumplings from this mixture and drop 8 to 10 dumplings in the Oil when the Oil becomes hot. Fry them crisp. All the sides should turn golden.
Serve hot with Green Chutney or Tomato Sauce.
Note:
If the Rice is cold, microwave it for 2 to 3 minutes. Mash it lightly with a Potato masher. You can blend them slightly in a blender also.
