When I see leftover Rice in the refrigerator, I always try not to throw it away but repurpose it some other way. This recipe is for a quick Vegetable Pulav using left over Rice. I increased the quantity of the dish by adding vegetables.
Ingredients:
Left Over Rice – 1 bowl
Oil – 2 tbsp
Mustard Seeds – ¾ tsp
Large Onion – 1 (sliced)
Green Chillies – 2 (Finely chopped)
Curry Leaves – from 2 sprigs
Turmeric Powder – ¼ tsp
Red Chilli Powder – ¼ tsp
Maggie Masala Cubes – 2
Chopped Mint Leaves – 3 tbsp
Chopped Cilantro – 3 tbsp
Parboiled Vegetables (Green Peas, Capsicum, Carrot – 1 ½ cups
Ghee (Clarified Butter) – 1 tsp
Garam Masala – 1 pinch
Salt – to suit taste
Method:
Heat the Oil in a pan. Add Mustard and allow them to crackle. Add Green Chillies, Sliced Onion and Curry Leaves. Sauté them for a minute. Add Turmeric Powder. Add Turmeric Powder, Red Chilli Powder, Maggie Stock Cubes (Crush and add), chopped Mint and Cilantro.
Add the parboiled vegetables. Stir cook for 2 minutes. Add the left over Rice. Mix them well to combine all the ingredients well. Adjust Salt. (Since the Maggie Cubes have Salt, add Salt to suit your taste).
Cover the pan with a lid and simmer for a couple of minutes. Sprinkle Garam Masala to enhance the flavor of the Pulav. Mix well and serve hot with Raita, Potato Wafers, Pickle etc.
Note:
If the Rice is cold, microwave it for 2 to 3 minutes. Mash it lightly with a Potato masher. You can blend them slightly in a blender also.
