I tried making a Kozhambu with Banana Flower for the first time and it turned out to be very tasty. Banana Flower is a very healthy vegetable. And many dishes can be made using this flower.
Ingredients
Vazhai Poo (Banana Flower) – 1 ½ cup (finely chopped)
Oil – 2 tbsp
Fenugreek Seed – ¼ tsp
Mustard Seed – ½ tsp
Cumin Seed – ½ tsp
Garlic (Crushed) 3 pods
Tomato (Big Sized) – 2 crushed
Chilli Powder – ¾ tsp
Black Pepper Powder – ½ tsp
Coriander Seed Powder – 2 tsp
Turmeric Powder – ¼ tsp
Salt to taste
Sugar – ½ tsp
Coconut Milk – ½ cup
Method
Chop them fine with knife or food processor.
Take water in a bowl. Ad tbsp of Curd to it and mix well. Add the chopped Banana Flower to this water to prevent the discoloration of the flower.
Heat 2 tbsp of Oil in a pan. Add Fenugreek Seed, Mustard Seed and Cumin Seed. When they crackle, add Onion and the crushed Garlic. Sauté till the Onion become translucent.
Add the crushed Tomato, Chilli Powder, Pepper Powder, Coriander Powder, Turmeric Powder and Salt.
Cook till the Oil separates from the masala. Add the flower after draining the curd.
Mix well.
Add 2 cups of water or as required. Cover the pan with a lid and simmer for 8 to 10 minutes till the flower is cooked well.
Add the Coconut Milk and Sugar. Adjust Salt.
Simmer for another couple of minutes in medium flame.
Transfer to a serving bowl. Serve with Roti or Steamed Rice.
