Bottle Gourd is a cooling, calming, diuretic and easy to digest vegetable. This gravy using Bottle Gourd is a very tasty recipe which goes well with rice and Rotis.
Ingredients:
Bottle Gourd – 250 Gms (cut into big cubes)
Potatoes – 2 (Cut into big Cubes)
Ingredients for sauté and grind:
Oil – 1 tsp
Onion – 1 (chopped)
Green Chilli – 1
Green Cardoman (Elaichi) – 2
Pepper Corn – 10
Cinnamon Stick – 1 inch
Cloves – 2
Crushed Ginger – 1 tsp
Crushed Garlic – 1 tsp
Cashew – 12 (halved)
Tomatoes (medium sized) – 3
Other Ingredients:
Oil – 2 tbsp
Cumin Seed – 1 tsp
Coriander Powder – 1 tsp
Red Chilli Powder – 1 tsp
Cilantro (Coriander Leaves) – 2 tbsp
Salt to taste
Method
Heat 1 tsp of the Oil in a pan. Add Cinnamon stick, Cardoman, Green Chilli and Onion. Sauté for a couple of minutes.
Add the Tomatoes, Crushed Ginger, Garlic and Cashew Nuts.
Cook till the Tomatoes become soft. Allow them to cool. Grind all of them together to a fine paste with very little water, if required. Keep aside.
Heat 1 tbsp of Oil in a broad pan. Add Bottle Gourd and Potatoes. Sauté them with a 1/4 tsp of Salt and Turmeric Powder.
Sauté till the vegetables become soft. Transfer to a bowl and keep aside.
Pour the remaining Oil in the pan. When the Oil becomes hot, add Cumin Seed and allow it to crackle. Lower the flame. Add Chilli Powder and the Coriander Seed Powder. Stir well.
Add the ground paste and 2 cups of water. Mix well.
Adjust Salt keeping in mind that we have already added Salt to the vegetable. Cover the pan with a lid and simmer for 5 to 6 minutes.
Add the sauteed vegetables and Cilantro.
Mix well.
Add chopped cilantro leaves.
Done!
Serve with Roti or steamed Rice.
