Kebabs are very popular all over India and are also a very popular street food and fast food. It takes its origin from Mogul cuisine. They are typically cooked on a skewer over a fire, but some kebab dishes are baked in a pan. This is the most popular Indian variety. Potato is the most common ingredient in making this Kebab. But we will see a Kebab with fresh Green Chick Peas as the main ingredient and no potatoes. Fresh Green Chick Peas are generally available during winter for about three months. They are also known as Cholia, tender Chick Peas. Kebabs are very tasty snacks always. Enjoy them with a cup of tea or coffee. They can also be served as starters / appetizer before lunch or dinner. You can deep fry them or shallow fry according to your choice.
Ingredients:
Fresh Green Chick Pea – 1 cup
Grated Ginger – from 1 inch long piece
Green Chillies -2
Finely Chopped Cilantro (Coriander Leaves) – 1/3 cup
Dry Mango Powder – (Amchur Powder) – ½ tsp
Cumin Seed Powder – 1 tsp
Turmeric Powder – 1 pinch
Roasted Sesame Seeds – 1 tbsp
Fresh Bread Crumbs – from 3 bread slices
Oil – 2 tbsp
Salt – to suit taste
Method:
Combine Chick Peas, Grated Ginger and the Green Chilies in a mixer and blend them to a coarse mixture. Transfer to a mixing bowl. Add chopped Cilantro, Salt, Dry Mango Powder, Turmeric Powder and roasted Sesame Seeds. Mix them well. Add the Bread Crumbs and mix well.
Divide the mixture into equal portions. Shape each portion into flat kebabs.
Heat the Oil in a non-stick pan. Cook the Kebabs till they are golden brown in color on both the sides.
Serve hot with Tomato Sauce and Green Chutney
Note:
You can sprinkle the Pattice with chat masala.
If you find the Kebab mixture little soft, you can add more bread crumbs.
If you do not get fresh Green Chick Peas, you can use dried Green Chick Peas. Soak the Peas in water, pressure cook till they become soft, mash them and then add the other ingredients and proceed to make the Kebabs. This would taste the same.
