Water Melon is a sweet tasty fruit which everyone loves. And everyone knows the health benefits of water melon. But, all of us throw away the peel and rind of the water melon without realizing the health benefits of the rind.
The rind/ peel contains high Potassium, Magnesium, Zinc and Vitamin A and C. It is also rich in antioxidants.
Below is a delicious dish from the watermelon rind/peel.
Ingredients:
Water Melon Peel (tough green skin removed and cut into small pieces) – 2 cups
Oil – 2 tbsp
Mustard Seeds – ½ tsp
Curry Leaves – from 1 twig
Coriander Seed Powder – ½ tsp
Red Chilli Powder – ¼ tsp
Crushed Garlic – 4 pods
Dry Mango Powder – 1 pinch
Turmeric Powder – 1 pinch
Grated Coconut – 2 to 3 tbsp
Chopped Coriander Leaves – 2 tbsp
Method:
Heat the Oil in a pan. Add Mustard Seeds and Cumin Seeds. When they crackle, add Curry Leaves.
In another minute, add chopped Water Melon Rinds, Salt and Turmeric Powder.
Add 1 ½ cup of water. Cover and simmer for 8 to 10 minutes. Check the quantity of water in between. If required, add more water.
At the end, the rinds should have been cooked well and the water should have evaporated. Add Coriander Seed Powder, Red Chilli Powder and dry Mango Powder. Cook for a couple of minutes.
Add the grated Coconut and the chopped Coriander Leaves.
Stir them well for a minute.
Serve with Roti, Chappati, and Rice etc.
