This is a very unique dish. It is made with roasted vermicelli (which you can find in the Indian store) and makes for a filling breakfast item.
Ingredients:
Roasted vermicelli: ½ cup
Eggs: 2
Onion: 1
Green chilies: 3
Cilantro: 1 tbsp
Pepper powder: ¼ tsp
Oil: 2-3 tsp
Salt to taste
Method:
Roasted vermicelli is easily available in stores now days. In case you do not find it, you can buy regular vermicelli and roast it with little oil till it gets a light pinkish color.
Boil 3 cups of water. Add vermicelli to it and cook till it’s halfway done.
Strain and transfer to a bowl.
Add finely chopped onions, green chilies, cilantro, egg, pepper powder and salt to it. Mix gently.
Heat a flat pan on medium heat. Smear oil and pour the above mixture and spread evenly. Cover and cook.
After 5-6 minutes, flip the omlette and pour some oil around it and cook well.
Done!
It does not need any accompaniment. But if needed, can be had with cilantro or tomato chutney.
