Vegetable Masala Sandwich

The number of varieties of Sandwich we can make is limitless. I had posted recipe for many number of Sandwiches. Here we will see how to make Vegetable Masala Sandwich. You can make it as an open Vegetable Sandwich or Iyengar Bakery Style Sandwich.

Ingredients:

Bread Slices – 6

Olive Oil – 1 tbsp

Cumin Seeds – ½ tsp

Green Chilli – 1 (finely chopped)

Crushed Ginger – ½ tsp

Onion Medium sized – 1 (sliced)

Grated Carrot – ¼ cup

Boiled Green Peas – 2 tbsp

Finely Chopped Cabbage – ½ cup

Finely Chopped Bell Pepper (Capsicum) – 2 tbsp

Tomato Large – 1 ((Deseeded and finely chopped)

Turmeric Powder – 1 pinch

Red Chilli Powder – ¼ tsp

Coriander Seed Powder – ½ tsp

Lemon Juice – 1 tsp

Garam Masala – 1 pinch

Tomato Sauce – 3 tbsp

Finely Chopped Coriander Leaves – 2 tbsp

Salt to taste

Ghee or Butter to toast

Method:

Heat 1 tbsp of Olive Oil in a pan. Crackle Cumin Seed and allow it to crackle. Add the sliced Onion, chopped Green Chilli and crushed Ginger. Stir cook for 2 minutes in medium flame.

Add the Carrots, Cabbage, Green Peas, Bell Pepper and the Tomatoes. Mix well.

Add the Red Chilli Powder, Garam Masala, Coriander Seed Powder, Salt and Turmeric Powder. Mix well. Sauté them for 5 to 6 minutes.

Add the Tomato Sauce and a spoon of Lemon Juice. Stir cook for a minute. Add the chopped Coriander Leaves and mix again. Transfer to a plate.

Toast the bread slices.

Spread some Tomato Sauce on the toasted side of three bread slices.

Spread the Veggie mix evenly over them.

Place the other bread slices over it and press lightly with a spatula. Apply some butter on both the sides of the Sandwich. And toast them crisp.

Cut the Sandwich and serve hot. Or pack it for lunch.
