Poricha Kozhambu is another Recipe from Tamilnadu- especially from Tirunelveli region. This recipe will look like Sambar at the end, but the taste will be completely different from the conventional Sambar. This is also called as Puzhi Illa Kolambu which means a Kozhambu without Tamarind. We add many vegetables, Pepper and Jeera while making this healthy Kozhambu.
Ingredients for roasting and grinding:
Whole Black Pepper – ¾ tsp
Cumin Seed – 1 tsp
Red Chilli – 2
Raw Rice – 1 tsp
Grated Coconut – ¼ cup
Pigeon Pea Lentil (Tur Dal) – ¾ tsp
Other Ingredients:
Onion – 1 (cut into cubes)
Brinjal/Eggplant (medium sized) – 3
Moringa (Drum Stick) – 2
Tomato – 1 (chopped)
Avarai Kai (Broad Beans) – 10
Turmeric (Haldi) Powder – ¼ tsp
Salt to taste
For tempering:
Coconut Oil – 2 tbsp
Mustard Seed – ½ tsp
Black Gram (Urad Dal) – 1 tsp
Cumin Seed – ½ tsp
Curry Leaves – from 2 twigs
Asafoetida – 1 pinch
Method
Cut and wash all the vegetables to the required sizes. Take them in a bowl, add water and keep aside.
Cook the Tur Dal with water till the Dal becomes soft. Drain and keep aside.
Dry roast Black Pepper, Cumin Seed, Red Chilli and the Raw Rice in medium flame till the rice pops up. Transfer it to a small vessel. Allow it to cool.
When it cools down, grind them all together with the grated Coconut to a fine paste with little water as required.
Start boiling around 1 litre of water in a vessel. Add Onion, Tomato, all the vegetables, salt and Turmeric Powder. When it comes to a boil, cover with a lid and simmer for 6 to 8 minutes.
Mash the cooked Dal and add to the vegetables. Simmer for 3 to 4 minutes more stirring in between.
Add the ground paste. Mix well. Add required water and simmer for 3 to 4 minutes.
In the meanwhile, heat the Oil in a pan. Add Mustard , Cumin Seed, Black Gram , Curry Leaves. When the Mustard starts crackling, switch off the flame, add Asafoetida.
Transfer this seasoning to the simmering Kozhambu. Cover with a lid.
Done!
Serve with steamed Rice or Roti.
Notes:
If Moringa Leaves are available, add them to this Kozhambu as one more vegetable while adding other vegetables. It adds flavor and taste to this recipe.
Other vegetables which can be added are : Carrot, Beans, Flat Beans, Cluster Beans etc.
