Rava Dosa is an easy recipe from South India which does not require any grinding or fermenting. This Dosa gets its name from one of its key ingredients which is Rava. There are a few varities in this Rava Dosa like Onion Rava Dosa, Rava Masala Dosa etc. The recipe below is for plain Rava Dosa.
Ingredients
Rava (Sooji / Semolina) – ½ cup
Rice Flour – ¼ cup
Maida (All Purpose Flour) – ¼ cup
Bengal Gram Flour / Besan / Kadalai Mavu – 1 tbsp
Grated Ginger – 1 tsp
Chopped Cilantro (Dhania) – 2 tbsp
Green Chilli – 1 (chopped)
Cumin Seed – 1.2 tsp
Oil for frying the dosa
Salt to taste
Crushed Black Pepper – 1 pinch
Water – 2 ½ cup or as required
Method
Take Rava, Maida and Rice Flour in a mixing bowl. Add water little by little and keep stirring simultaneously. Mix well without any lump.
Before pouring the batter for the next Dosa, mix the batter well. Add 1 to 2 tbsp of water if required while mixing.
Add all other ingredients except Oil. Whisk it till it becomes smooth without any lump. If the batter is thick or medium consistency, add more water and whisk well. The batter should become thin, but should not become watery. If it becomes watery, add little more rice flour and whisk well. Allow to rest for 10 to 15 minutes. The batter may become little thick during this time. If so, add a little water and mix well to make it thin.
Heat a nonstick pan. Sprinkle little oil. Wipe and spread the oil on the pan. Pour a ladle of batter starting from the outer edge of the pan towards the middle of the pan.
Do it with fast movement. Fill any gap formed with little batter.
Cook this Dosa in low to medium flame. When the top side is cooked, spread ½ to 1 tsp of Oil on the top of the Dosa and also on its sides.
Cook till the bottom of the Dosa becomes golden brown and crisp. Flip the Dosa and cook the other side also well.
Serve the Rava Dosa hot with Chutney of your choice.
Note: The pan must be very hot while pouring and spreading the batter. But, reduce the flame to low or medium while cooking. Before making the next dosa, increase the flame to make the pan very hot.
