Everyone in our family loves Thenkai Bun (Sweet Coconut Bun) which is available in my hometown. I adopted the idea for this Sandwich and it became a super hit with my family. It is a very simple and easy to make Sandwich.
Ingredients
Bread Slices – 4
Ghee – 1 tsp
Fresh Grated Coconut – ½ cup
Cashew Nuts (Broken) – 1 tbsp
Raisins – 1 tbsp
Cardoman Powder – ¼ tsp
Sugar (Powdered) – ¼ cup
Hot Milk – 2 tbsp
Butter or Ghee (Clarified Butter) – for toasting and/or grilling the Bread.
Method
Heat 1 tsp of Ghee in a pan. Add Coconut and Cashew and roast them for a couple of minutes in low to medium flame.
Add the Raisins, Cardoman Powder and the powdered Sugar.
Mix well. Add the hot Milk. Mix well and cover the pan with a lid and simmer in low flame for a couple of minutes. Milk helps to bind the ingredients. Remove from the flame and allow it to become warm.
Spread this mixture on the Bread Slices.
Toast the Sandwich in a pan or griddle or a toaster.
Done!
Note:
The Sandwiches can be served without toasting also.
