Moringa Leaves Dry Curry/ Murungai Keerai Poriyal

Moringa Leaves (Murungai Keerai) contains lot of Calcium, Iron, Protein, Vitamin C etc

It prevents mouth ulcer, stomach ulcer, eye diseases etc. There are many recipes which can be prepared with Murungai Keerai as the main ingredient. Murungai Keerai Poriyal is one of them which can be served with steamed Rice and Sambar, Rasam, Kozhambu etc.

Ingredients

Murungai Keerai (Moringa Leaves) – 3 cups tightly packed

Oil – 2 tbsp

Mustard Seed – 1 tsp

Urad Dal – 2 tsp

Sugar – ½ tsp

Red Chilli – 4 (broken)

Onion (finely chopped) – 2

Garlic Pod – 5

Grated Coconut – ½ cup

Salt to taste

Method

Heat the Oil in a pan. Add Mustard Seed, Urad Dal and Red Chilli. Stir for a few seconds.

Add Chopped Onion and garlic and sauté till the Onion become translucent.

Add a cup of water and Sugar. (Sugar retains the color of the leaves). When water starts boiling, add the cleaned and washed Murungai Leaves. Cover with a lid.

Allow it to cook for 4 to 5 minutes.

Turn the leaves and simmer for another 4 to 5 minutes till the water evaporates.

Add the grated Coconut and salt.

Sauté for a minute.

Transfer to a serving bowl.

Serve with Rice or Roti.
