If you have cooked rice and there is some quantity not used (left over), we can use the rice to make tasty Rotis or Parathas instead of wasting it.
Ingredients:
Left-over cooked Rice – 2 cups
Turmeric Powder – ½ tsp
Grated Ginger – 1 tsp
Amchur Powder (Dry Mango Powder) – ½ tsp
Chilli Powder – ½ tsp
Cumin Seed Powder – ½ tsp
Finely chopped Coriander Leaves – 3 tbsp
Whole Wheat Flour – 1 cup (approx.)
Oil – 1 tbsp + 1 tbsp
Oil – to cook Roti or Parathas
Method:
Mix the left over rice with the spices.
Add enough wheat flour and knead to smooth dough. It is not necessary to add water since the water content in the rice will help to make the dough.
Apply 1 tsp of Oil over the dough and leave the dough to rest for 15 to 20 minutes.
Knead it again and divide into equal portions.
Roll each portion into slightly thick Rotis.
Cook both the sides of the Rotis in a hot pan with Ghee or Oil spread on both the sides. Cook the Rotis crisp or soft (to suit your liking)
Serve with Raita or gravy.
Note:
If the left over rice is stored in refrigerator and is stiff, sprinkle few spoons of water on it and micro wave it to 1 ½ to 2 minutes. Mash it with a ladle when it is hot. Then, follow the recipe.
