Purple Yam is used in making deserts, snacks, ice creams etc. Let us see how to make a delicious tangy gravy with this wonderful vegetable.
Ingredients:
Oil – 2 tbsp
Cumin Seeds – 1 tsp
Purple Yam (Ratalu) – 300 Gms (Peeled and cut into cubes
Red Chilli Powder – 2 tsp
Cumin Seed Powder – ½ tsp
Garam Masala – ¼ tsp
Coriander Seed Powder – 1 tbsp
Turmeric Powder – 1 pinch
Salt to taste
Green Chillies – 2 (chopped)
Yogurt – 1/3 cups (should not be sour)
Fresh Cream – 1 tbsp
Chopped Coriander Leaves – 1 tbsp
Method:
Take all the Masala Powders except Garam Masala in a bowl. Add 3 to 4 tbsp of water and make a paste.
Heat the Oil in a pan. Add the Yam pieces and Cumin Seeds. Roast the Yam till it is done.
Add the masala paste to the roasted Yam.
Continue stir cooking for another 2 to 3 minutes till the Masala become dry.
Add 1 cup of water, Green Chillies and Salt. Mix well.
When it comes to a boil, cover and simmer for 4 to 5 minutes in low to medium flame.
Add the Yogurt, Fresh Cream and the chopped Coriander Leaves. Stir cook for one to two minutes in low flame.
Transfer to a serving bowl.
Serve with Rice, Bread, Roti , Naan etc.
