Purple Yam Gravy/ Ratalu Tomato Gravy/Ratalu Kilangu Gravy

Purple Yam is a root vegetable that has many nutritional and health benefits. The rich fiber content helps in digestion. The purple color is due to the purple pigments called anthocyanin which helps in blood circulation. Purple Yam helps in controlling Asthma. It has high amount of Antioxidants and so, it can help in controlling Cancer Cells. One can go on listing its health benefits.

Purple Yam is used in making deserts, snacks, ice creams etc. Let us see how to make a delicious tangy gravy with this wonderful vegetable.

Ingredients:

Oil – 2 tbsp

Cumin Seeds – 1 tsp

Purple Yam (Ratalu) – 300 Gms (Peeled and cut into cubes

Red Chilli Powder – 2 tsp

Cumin Seed Powder – ½ tsp

Garam Masala – ¼ tsp

Coriander Seed Powder – 1 tbsp

Turmeric Powder – 1 pinch

Salt to taste

Green Chillies – 2 (chopped)

Yogurt – 1/3 cups (should not be sour)

Fresh Cream – 1 tbsp

Chopped Coriander Leaves – 1 tbsp

Method:

Take all the Masala Powders except Garam Masala in a bowl. Add 3 to 4 tbsp of water and make a paste.

Heat the Oil in a pan. Add the Yam pieces and Cumin Seeds. Roast the Yam till it is done.

Add the masala paste to the roasted Yam.

Continue stir cooking for another 2 to 3 minutes till the Masala become dry.

Add 1 cup of water, Green Chillies and Salt. Mix well.

When it comes to a boil, cover and simmer for 4 to 5 minutes in low to medium flame.

Add the Yogurt, Fresh Cream and the chopped Coriander Leaves.  Stir cook for one to two minutes in low flame.

Transfer to a serving bowl.

Serve with Rice, Bread, Roti , Naan etc.
