Here is another dish made with Jackfruit Seeds. As I had said earlier, we can use the Jackfruit Seeds to make great dishes instead of throwing them away. Here is one such dish which is a traditional dish from the region of Kerala.
Ingredients:
Skinned and cut Palakottai (Jack fruit Seeds) – 1 ½ cups
Oil – 2 tbsp
Mustard Seeds – 1 tsp
Urad Dal – 1 tsp
Onion (Medium sized) – 2 (Finely chopped)
Curry Leaves – from 1 twig
Green Chillies – 4 (Finely chopped) adjust the quantity to suit taste
Grated Ginger – 1 tsp
Grated Fresh Coconut – 4 tbsp
Finely chopped Coriander Leaves – 3 tbsp
Method:
Wash the chopped Jackfruit Seeds.
Cook them in a pressure cooker with water and little Salt for 3 to 5 minutes till the seeds become soft.
Once it cools down, mash the seeds partially with a masher. Keep aside.
Heat the Oil in a pan. Add Mustard Seeds and Urad Dal. Let the Mustard crackle. Add the finely chopped Onions, Green Chillies and Curry Leaves. Stir cook them till the Onion becomes translucent.
Add the partially mashed Jack Fruit Seeds and the grated Coconut. Mix well. Continue cooking for a few minutes.
Add Lemon Juice and Coriander Leaves.
Mix well.
Done!
Note:
To make it easy to remove the skin from the seeds, cut the seeds vertically into two. This will make it easy to remove the skin.
