Instant Rava Paniyaram is a very tasty South Indian dish which can be served as a breakfast or evening snack. The main ingredients are Rava.
Ingredients
Sooji Rava (Semolina) – 1 cup
Yogurt (Curd/ Dahi) – ¾ cup
Water – ½ cup (or as required)
Oil – 3 to 4 tsp
Mustard (Rai) Seed – ¼ tsp
Urad Dal – ¼ tsp
Green Chilli – 1 (chopped)
Curry Leaves – from 1 twig
Grated Ginger – ½ tsp
Grated Carrot – 2 tbsp
Salt to taste
Eno Fruit Salt ½ tsp Or Baking Soda – ¼ tsp
Method
Take 1 cup of Rava in a mixing bowl. Add the Curd and ½ cup of water and Salt. Mix well to form a thick batter without any lump. Keep aside and allow to rest for 15 minutes at least.
Heat 2 tsp of Oil in a pan. Add Mustard and Urad Dal. Allow the Mustard to crackle. Add Green Chilli and Ginger. Sauté for a few minutes.
Add Onion and Curry Leaves. Stir for a minute till the Onion becomes translucent.
Add carrots and stir till cooked.
Transfer this tempering to the Rava batter. Mix well. Allow to rest for 10 minutes.
Rava would absorb the water. Add Eno Salt or Baking Soda. Add more water if required and mix well. The batter must acquire a thick and dropping consistency.
In the meanwhile, heat a Paniyaram (Appa) Chatti. Add very little Oil in each of its cavities.
Fill each cavity with a tbsp of the batter. Cover the pan with a lid and simmer for a minute.
Once the bottom of the batter becomes golden brown, flip it with a spoon or stick and cook the other side. Cook on low flame till it becomes golden brown on both sides.
Transfer to a plate.
Serve with coconut chutney.
