As we all know, Egg is a good source of Protein. We make a quick breakfast with bread and Egg Omelette without even knowing the health benefits of Egg. But, we can make numerous tasty dishes with Eggs. We will see how to make a tasty Egg roast
Ingredients:
Hard Boiled Eggs – 5
Oil – 3 tbsp
Onion -2 (finely chopped)
Green Chillies – 4 (chopped)
Turmeric Powder – 1/8 tsp
Large Tomatoes – 2 (crushed)
Ginger Garlic Paste – 1 tsp
Curry Leaves – from 2 sprigs
Red Chilli Powder – 1 tbsp
Coriander Seed Powder – 1 tsp
Garam Masala – ½ tsp
Finely chopped Coriander Leaves – 2 tbsp
Grated Coconut – 2 tbsp
Method:
Heat 2 tbsp of Oil in a pan. Crack the hard boiled Eggs and peel the Eggs. Make few slits on each Egg. Add to the Oil in the pan. Roast the Eggs in the Oil in low medium flame till all the sides of the Eggs turn golden. Transfer the Eggs to a plate or bowl.
Add the remaining Oil to the pan. Add the Onions and fry them for 3 to 4 minutes in medium flame. Add the Green Chillies, Salt and the Turmeric Powder. Cook for a minute. Add the Tomatoes, Curry Leaves and the Ginger Garlic Paste. Cook for 2 to 3 minutes.
Add the Chilli Powder and Coriander Seed. Mix them well. Add 2 to 3 tbsp of water and cook the Tomatoes soft.
Add the roasted Eggs and a cup of water. Mix them well. Adjust the seasoning at this stage. Add a cup of water and simmer for 4 to 5 minutes till the gravy becomes dry.
Add the grated Coconut, Garam Masala and Cilantro. Mix well. Simmer for 2 minutes.
The tasty and spicy Roasted Egg Masala is ready.
Note:
I served this Egg Roast with Rasam Rice.
If you want to serve with mild Pulav or Nan or Roti, you can make it as gravy by adding little more water and not making it as a dry dish.
