This easy Potato recipe tastes great and goes well as a side dish with Sambar Rice, Dahi Rice, Roti etc. It can also be served with a cup of tea. This dish requires very minimal ingredients and is very easy to make. So perfect for a busy day 🙂
Ingredients:
To Marinate the Potatoes:
Baby Potatoes – 400 Gms
Sambar Powder – 1 tbsp
Red Chilli Powder – 1 tsp
Turmeric Powder – 1/8 tsp
Salt – to suit taste
Oil – 1 ½ tbsp
For the dish:
Oil – 1 tbsp

Finely chopped Garlic – 2 tbsp
Coarse Pea Nut Powder – 2 tbsp
Finely chopped Garlic – 1/8 tsp
Finely chopped Coriander Leaves – 2 tbsp
Method:
Wash and clean the Baby Potatoes. Pressure cook the Potatoes in two cups of water, a spoon of Salt and Turmeric Powder. Let the steam cools on its own. Remove the Potatoes and allow them to cool further. Peel the Potatoes. Make random pricks on the Potatoes with a fork.
Take all the dry spices under the column “To Marinate” column in a mixing bowl. Mix well. Add Oil and mix again.
Add the Baby Potatoes and mix till all the Potatoes are coated evenly with the Masala. Adjust Salt, if required.
Allow them to rest for 30 minutes.
Heat 1 tbsp of Oil in a pan. Add the chopped Garlic. In low to medium flame, sauté them for a minute. Add the marinated Potatoes. Roast them for 4 to 6 minutes in low to medium flame till Potatoes turn golden brown.
Add the coarse Peanut Powder. Mix well.
Add the Coriander leaves. Stir cook for a minute.
The tasty garlic flavored Baby Potatoes are ready.
Note:
You can make this dish with the regular potatoes also. After boiling and peeling, cut them into cubes and process further as above.
