Everyone likes Sweet Corn and dishes made using Sweet Corn would definitely be tasty and likable to everyone. We will see one such dish here. It is very easy to make – quick and simple. It goes well with Rice and Kozhambu. In fact, you can serve it as a salad as well.
Ingredients:
Boiled Fresh Yellow (or white) Corns – 1 cup
Oil – 1 tbsp
Mustard Seeds – ¾ tsp
Urad Dal – 1 tsp
Chana Dal – 1 tsp
Red Chilli – 1 (Broken)
Green Chilli – 2 (finely chopped)
Onion – 1 (finely chopped)
Curry Leaves – from 1 twig
Grated Coconut – 3 tbsp
Finely chopped Coriander Leaves – 2 tbsp
Method:
Heat the Oil in a pan. Add Mustard Seeds. Allow them to crackle. Add Urad Dal and Channa Dal. Stir. In a few seconds, add broken Red Chilli. Stir for a few seconds and then add Onion, Green Chilli and Curry Leaves. Sauté till the Onion become translucent.
Add the boiled Sweet Corn and Salt. Mix well. Cover the pan with a lid and simmer for 3 to 4 minutes in low flame.
Add grated Coconut and Coriander Leaves.
Mix and stir cook for a minute.
The tasty and healthy Sweet Corn Poriyal/Salad is ready for serving.
