Boiled Peanut Chaat / Chatpata Peanut Salad

Chaat or chat is a savory snack that originated in India especially in Uttar Pradesh. It is typically served as an appetizer and is generally available at roadside food stalls or food carts across the Indian subcontinent. Peanuts have its own health benefits and so, we can call this as a healthy appetizer. It is very easy to make and requires very few ingredients – all available in the kitchen in general.

Ingredients:

To boil Peanuts:

Peanuts – 2 cups

Salt – ½ tsp

Water – 3 cups

Other ingredients:

Grated Carrot – 3 tbsp

Ginger – 1 ½ inch long (thinly sliced)

Thinly sliced Tomato -3 tbsp (deseeded)

Finely chopped Onion – 3 tbsp

Thinly sliced Mango – 3 tbsp

Green Chilli (less spicy variety) – 2 (finely chopped)

Chilli Flakes – ¼ tsp

Chaat Masala – 1 tsp

Salt – to taste

Brown Sugar – 1 tbsp

Lemon Juice – 1 tbsp

Coriander Leaves – ¼ cup

Pomegranate Pearls – ½ cup

Green Chutney – 2 to 3 tbsp

Fine Sev – to garnish

Method:

Pressure cook the Peanuts with ½ tsp of Salt and 3 cups of water for 4 to 5 whistles or till the peanuts become soft. Drain the water.

Take the drained peanuts in a bowl. Add grated Coconut, sliced Ginger, Tomato, Onion, Mango and Green Chilli. Mix well.

Add the Chilli Flakes, Chaat Masala, Salt, Brown Sugar and Lemon Juice. Stir them well.

Add Cilantro, Pomegranate Pearls and the Green Chutney. Mix them well. Adjust Salt and spices, if required.

Serve the chaat hot or cold topping with Sev, Cilantro and Pomegranate   Pearls.

For Green Chutney:

Cilantro – 1/3 cup

Mint Leaves – 3 tbsp

Green Chilli – 1 (spicy variety)

Lemon Juice – 1 tbsp

Salt – to suit taste

Grind together all the above to a fine consistency with little water and the Green Chutney is ready for use.

Note:

Add the toppings only while serving.

If you do not have any of the vegetable mentioned, you can omit them.  Instead, you can also add vegetables which are readily available with you like Beetroot, Cucumber etc.

Chaat Masala and Green Chutney contain Salt. Also, you have boiled the Peanuts with Salt. So, adjust Salt considering these salt contents.
