Bitter melon (or Bitter Gourd) Fry is a very healthy dish. This dish is prepared in the North Indian Style. The bitter taste of this melon is not liked by many. The bitterness can be removed by following the tips given in this recipe. This recipe goes very well with Dal Rice, Curd Rice etc. It is believed that this vegetable helps in controlling the blood Sugar to a great extent.
Ingredients
Bitter Melon – 400 Gms
Oil – 2 tbsp
Cumin Seed – ½ tsp
Saunf (Fennel Seed) – ½ tsp
Mustard Seed – ½ tsp
Coriander Seed Powder – 1 tbsp
Red Chilli Powder – 1 ½ tsp
Roasted Jeera Powder – ¾ tsp
Onion – 2 (sliced)
Powdered Sugar – ¼ tsp (optional)
Turmeric Powder – 1 pinch
Salt to taste
Lemon Juice – ½ tsp
Method
Wash and slice the Bitter Gourd to thin slices. (Refer the picture)
If the seeds are hard, discard them. Use the soft seeds.
Soak the Bitter Gourd in salt water for 20 minutes. (1 tsp of salt added to the water).
Drain the water. Rinse the Bitter Gourd again in water. Squeeze out the water from the Bitter Gourd. Add salt and turmeric and keep aside.
Heat the Oil in a pan. Add Cumin Seeds and Mustard Seeds and allow them to crackle.
Add the Bitter Melon. Sauté it for 5 to 6 minutes.
Add ¾ of the dry Masalas and the Powdered Sugar. Mix well. Cover and cook for 3 to 4 minutes.
Add the sliced Onions and the remaining dry Masala powders.
Mix well again and cook in medium flame till the Bitter Gourd becomes crispy.
Transfer to a serving bowl. Squeeze some lemon juice and serve.
