Potato Poha is a very popular breakfast recipe in Maharashtra. There are many variations in its preparation like Peas Poha, Onion Poha, Tomato Poha, Dadape Poha etc. Each one has its own flavor.
Ingredients
Poha (Aval / Beaten Rice) – 1 ½ cup
Potato – 2 (Peeled and cut into small cubes)
Oil – 2 tbsp
Cumin Seed – ½ tsp
Curry Leaves – from 1 twig
Green Chilli – 2 (finely chopped)
Grated Ginger – 1 tsp
Boiled Vatana (Green Beas) – ¼ cup (optional)
Tomato – 1 (finely chopped)
Red Chilli Powder – 1 pinch
Lemon Juice – ½ tsp
Haldi (Turemeric) Powder – ½ tsp
Salt to taste
Cilantro (Dhania Leaves) – 1 tbsp (finely chopped)
Fine Sev – 2 tbsp
Pomegranate – 1 tsp
Method
Wash the Poha in water and strain in a colander. Let it rest for 10 minutes.
Add Salt, Haldi and pinch of Red Chilli Powder. Mix well and keep aside.
Heat 1 tbsp of Oil in a pan. Add the Potato and a pinch of Salt.
Roast it till the Potatoes become golden brown. Transfer to a bowl.
In the same pan, heat 1 tbsp of Oil. Add Cumin Seed. Allow it to crackle. Add Green Chilli, Grated Ginger and Curry Leaves. Sauté for a minute in medium flame.
Add the boiled Vatana, Tomato and the roasted Potato. Cook for a minute.
Add the soaked Poha. Mix well. Cover the pan with a lid and simmer for 3 to 4 minutes. Adjust Salt.
Add the chopped Coriander Leaves and Lemon Juice and serve hot.
While serving, spread fine Sev and Pomegranate on the top.
