Banana flower fritters is a very tasty snack to have with a hot cup of coffee or tea. It is another variation of the many number of Vadas.
Ingredients
To Grind
Bengal Gram (Chana Dal/ Kadalai Paruppu) – ¾ cup
Fennel Seed (Saunf) – ¾ tsp
Ginger – ¾ inch piece
Green Chill – 2 Nos
Red Chilli – 2 Nos
Asafoetida (Hing) – 1/8 tsp
Salt to taste
Other Ingredients
Vazhaipoo (Banana Flower) – 1 ¼ cup (Clean and finely chopped)
Onion – 1 (finely chopped)
Cilantro (Dhania Leaves) – 2 tbsp (finely chopped)
Rice Flour – 1 tbsp
Oil – for deep frying
Method
Soak the Dal in water for an hour.
Drain the water and grind the Dal together with all other ingredients mentioned under “To Grind” to a coarse consistency.
Clean the Banana Flower and chop them as explained in an earlier post.
Do not add water while grinding. Transfer to a mixing bowl. Add Rice Flour, Onion, Banana Flower and Dhania Leaves.
Heat required Oil in a pan for deep frying. Drop a small bit of batter. If it fluffs out immediately, the oil is ready for frying the Vadas.
Make the dough into small patties and drop them in the hot oil carefully without spilling the oil.
Fry the patties in medium flame till it turns golden brown. Keep flipping the sides so that both the sides of the patties are fried uniformly. Transfer to a kitchen towel or tissue paper so that the excess oil is sucked by the towel or the tissue.
Done!
Serve with Coconut Chutney to accompany with a hot cup of coffee or tea.
This Vada can served with curd rice as well.
