Karuppu Ulundhu (Whole Black Gram) with the skin intact is a very healthy lentil. This dish is rich in protein content and the dietary fiber. It is an easy dish that can be made real quick if you have the soaked dal ready!
Ingredients:
Whole Black Gram – ½ cup
Oil – 1 tbsp
Mustard Seeds – 1 tsp
Red Chilies – 2 (broken)
Green Chilies – 2 (Finely chopped)
Grated Ginger – 1 tsp
Onion – 2 (Finely chopped)
Curry Leaves – from 1 twig
Grated Coconut – ¼ cup
Finely chopped Cilantro (Coriander Leaves) – 3 tbsp
Salt – to suit one’s taste
Asafetida – a tiny pinch
Method:
Soak the whole Urad Dal with the skin in water for 7 to 8 hours. Strain the water. Take them in a pressure cooker with 3 to 4 tbsp of water and cook them for 3 to 4 minutes with the weight on in medium flame till the Dal becomes soft (do not cook it mushy as it become sticky).
Heat the Oil in a pan. Add Mustard Seeds and allow the seeds to crackle. Add Red Chili and Asafetida. Stir for few seconds. Add Onions, Green Chilies, grated Ginger and Curry Leaves. Stir cook till the Onion turns translucent. Add the cooked Urad Dal and grated Coconut.
Stir cook it well. Place a lid and simmer for 2 to 3 minutes in low flame. Add the chopped Cilantro. Toss it again and switch off the flame.
Serve hot or warm as a snack.
