Water Melon is a sweet tasty fruit which everyone loves. And everyone knows the health benefits of water melon. But, all of us throw away the peel and rind of the water melon without realizing the health benefits of the rind.
The rind/ peel contains high Potassium, Magnesium, Zinc and Vitamin A and C. It is also rich in antioxidants.
Below is a delicious dish from the watermelon rind/peel.
Ingredients:
Water Melon Peel (tough green skin removed and cut into small pieces) – 2 cups
Oil – 2 tbsp
Mustard Seed – ½ tsp
Green Gram (Moong Dal) – ¼ cup
Black Gram (Urad Dal) – 1 tsp
Curry Leaves – from 1 twig
Onion – 1 (finely chopped)
Fresh Grated Coconut – 2 tbsp (Optional)
To Grind:
Grated Coconut – 2 tbsp
Green Chilli – 2
Cumin Seed – ½ tsp
Garlic Pods – 2
Method:
Wash the Moong Dal. Take it in a vessel which can go into a pressure cooker. Add 2 to 3 tbsp of water and place the vessel in the pressure cooker. Take the water melon rinds in another vessel, add 2 tbsp of water, add a little Salt and keep this vessel above the vessel containing the Dal in the pressure cooker.
Pressure cook them for 2 whistles. The Dal must become stiff and separate. Keep them aside.
Grind together all the ingredients under the “To Grind” column coarsely without adding any water.
Heat the Oil in a pan. Add Mustard and Cumin Seeds and allow them to crackle. Add the Curry Leaves. Add the finely chopped Onion and Salt. Sauté those till the Onion become translucent.
Add the cooked Water Melon Rinds. Stir for 2-3 minutes.
Add the cooked Moong Dal, Salt and the grated Coconut. Mix well. Stir cook for a minute.
Transfer to a serving bowl.
Serve this Poriyal with Sambar Rice, Rasam Rice etc.
