Vegetable Pulao is one of the Indian Rice Dish prepared with various vegetables and mild spices. It is a very easy to make recipe. This rice goes very well with Raita or any type of gravy
Ingredients
Basmati Rice – 1 cup
Water – 2 cups
Ghee (Clarified Butter) – 2 tbsp
Jeera (Cumin Seed) – ½ tsp
Cinnamon Stick (Dalchini) – 2 pieces
Bay Leaf (Tej Patta) – 1
Black Pepper Corns – 12 to 15
Star Anise (Chakra Phool) – 1
Green Cardoman (Elaichi) – 4
Onion – 1 (finely chopped)
Ginger Garlic Paste – 1 tsp
Green Chilli – 2
Finely Chopped Pudhina (Mint) Leaves – 2 tbsp
Finely Chopped Coriander (Cilantro) Leaves – 2 tbsp
Mix Vegetables (chopped) – 1 ½ cup (Fresh Green Peas, Carrot, Fresh Beans Etc)
Salt to taste
Method
Wash and soak the rice in water for 20 minutes. Drain and keep aside the rice.
Heat the Ghee in pressure cooker in medium flame. Add Cumin Seed, Cinnamon, Bay Leaf, Cardoman, Star Anise and Black Pepper.
When they start sizzling, add the finely chopped Onion and Green Chilli, Sauté till the Onion become translucent. Add the Ginger Garlic Paste and Sauté till its raw smell goes away.
Add the mixed vegetables. Stir fry for 4 to 5 minutes in medium flame.
Add water.
When it starts boiling, add the soaked rice and salt. Cook till the water evaporates.
The rice will be little soggy at this stage.
Cover the cooker with the lid. Allow the steam to gather, but do not allow the whistle to blow. Reduce the flame to low and cook for 4 to 5 minutes.
Switch off the flame.
When the pressure releases on its own, remove the lid and fluff the rice with a fork.
Serve this Pulav hot with Raita or any gravy.
Notes:
The quantity of water may have to be varied based on the quality of Rice.
You must open the lid of the pressure cooked as soon as the pressure drops. Else the rice may become too soft and sticky.
