Spicy Egg Fry is a South Indian Style recipe – easy to make with minimum of available ingredients at home.
Ingredients
Gingelly Oil (or any other vegetable Oil) – 2 tbsp
Mustard Seed – ½ tsp
Urad Dal – 1 tsp
Curry Leaves – 2 sprig
Finely Chopped Onion (big) – 1
Finely Chopped Green Chilli -1
Red Chilli Powder – ½ tsp
Coriander Seed Powder – 1 tsp
Turmeric Powder – 1 pinch
Black Pepper Powder – 1 ½ tsp
Salt to taste
Boiled Eggs – 4
Method
Slice the Eggs vertically into half and keep aside.
Heat the Oil in a pan. Add Mustard Seeds and allow them to crackle. Add Urad Dal. Add Curry Leaves within a few seconds. Fry them crisp.
Add the chopped Onion, salt and green chilli. Sauté till the Onion becomes translucent.
Add Red Chilli Powder, Coriander Seed Powder and Turmeric Powder. Sauté them for 3 to 4 minutes.
Add the sliced Eggs. Sprinkle half the quantity of the Black Pepper Powder.
Toss the Eggs gently and sprinkle the remaining Pepper Powder on them.
Cook in low flame for 3 to 4 minutes. Flip the Eggs gently with the masala and cook for a few minutes. The masala must be coated uniformly over the eggs on both the sides.
Transfer gently to a serving bowl.
Serve with Rice and Dal or Roti etc.
Note:
Adjust the spiciness by reducing or increasing the quantity of Pepper Powder.
