Urad dal or Ulundu Chutney is one of the many types of chutney for Idli, Dosa etc. It is very simple to prepare this chutney. Ulundu (Urad Dal) is very rich in Iron and is a good source of protein. So it’s a healthy alternative to coconut chutney.
Ingredients
Urad Dal (Black Gram Lentil / Ulundhu) – ¼ cup
Red Chillies – 4 to 5
Grated Coconut – 2 tbsp
Curry Leaves – 1 strand
Salt to taste
Asafoetida (Hing) – 1/8 tsp
Tamarind (Imli) – small marble size
For tempering:
Oil – 1 tsp
Mustard (Rai) – ½ tsp
Curry Leaves – 1 strand
Method
Heat ½ tsp of Oil in a pan. Add Red Chillies and sauté for a minute.
Add Urad Dal and curry leaves. Roast them in medium flame till the Dal turns into golden brown.
Add Grated Coconut, salt and Imli and sauté for a minute.
Transfer to a bowl. When it cools down to the room temperature, grind them together in a grinder without water first. Now, add a little water and grind it to a fine paste. Transfer to a bowl.
Heat 1 tsp of oil in the pan. Add Mustard and allow it to crackle. Add Curry leaves and allow it to fry.
Transfer to the chutney, mix and serve.
