Tender Coconut gives instant energy and has a lot of health benefits. It is also a good anti-oxidant. And the bonus is that it is liked by everyone. I attempted making a juice with Tender Coconut with Honey and Ginger which gives this refreshing juice a nice punch.
Ingredients:
Cold Tender Coconut water – 2 ½ cups (from 2 coconuts)
Cold Tender Coconut Pulp – 1 cup (chopped)
Honey – 1 to 2 tbsp
Lemon Juice – as required
Grated Ginger – ½ tsp
Method:
Blend the Coconut pulp and ginger with a cup of Tender Coconut water to a fine paste in a blender or mixer.
Add the balance Coconut Water, Lemon and Honey. Blend them again.
Transfer to glasses and serve cold.
Note:
You can blend it coarsely or smooth. Both tastes awesome.
You can replace Honey with Sugar or Jaggery or Glucose Powder.
