Sweet and Spicy Carambola Pickle/ Instant Star Fruit Pickle

We will see a very quick and easy to make pickle recipe with Star Fruit – also called as Carambola.  I tried to make this with regular Indian spices and it turned out to be a good pickle, which you can store for a week in the refrigerator, provided it is not finished off in one go. It is really tasty. This Star Fruit is very rich in vitamin C, Fiber and antioxidants. You can also make chat with this fruit.

Ingredients:

Star Fruits – 3 (cut into small pieces)

Oil – 3 tbsp

Mustard Seeds – ½ tsp

Dried Red Chillies – 3 (broken)

Red Chilli Powder – ¾ tsp

Turmeric Powder – 1 pinch

Salt – to suit taste

Jaggery (Gur) – 2 tsp

Method:

Heat the Oil in a pan. Add Mustard Seeds and allow them to crackle. Add broken Red Chillies and stir fry for a few seconds.

Add the chopped Star Fruit pieces and roast them for 3 to 4 minutes in low flame.

Add Salt, Chilli Powder and Turmeric Powder. Mix well and simmer for 3 to 4 minutes.

Add the Jaggery. Stir them well. Allow to cook for a couple of minutes.

The sweet and spicy Star Fruit pickle is ready.
