This Stuffed Bread Omlette uses Soya Chunks and is a different way of making a nutritious omelette sandwich.
Ingredients
Bread Slices – 4
Egg – 3
Salt to taste
Green Chilli – 2 (finely chopped)
Onion -1 (finely chopped)
Turmeric (Haldi) Powder – 1 pinch
Cilantro (Dhania) – 1 tbsp (finely chopped)
Black Pepper Powder – ¼ tsp
Milk – 2 tbsp
For Filling
Soya Chunks – ½ cup
Oil – 1 tbsp
Cumin Seed (Jeera) – 1 tsp
Onion -2 (finely chopped)
Ginger Garlic Paste – 1 tsp
Tomato – 1 (finely chopped)
Chilli Powder – 1 tsp
Roasted Coriander (Dhania) Powder – 1 tsp
Roasted Jeera (Cumin Seed) Powder – ¾ tsp
Turmeric (Haldi) Powder – ¼ tsp
Salt to taste
Fresh Cream – 1 tbsp
Cilantro (Dhania Leaves) – ¼ cup (finely chopped)
Method to prepare the filling
Soak the Soya Chunks in hot water for 3o minutes. Squeeze the water out completely and rinse 3 to 4 times in water. Squeeze the water out completely. Crush it in a food processor or in a mixer into fine granules.
Heat the Oil in a pan. Add Jeera. When it crackles, add the Onion and Ginger Garlic Paste. Cook till the Onion becomes translucent.
Add the Tomatoes and cook it for a couple of minutes. Add all the dry Masala Powders and Salt under the “For Filling” column. Mix well. Cover and simmer for 5 to 6 minutes in medium flame till the Tomatoes become soft.
Add the crushed Soya granules. Cook for a couple of minutes. Add ¼ cup of water and mix. Cover and cook for 5 more minutes in low to medium flame stirring in between.
Add the Fresh Cream and Dhania. Mix well. Simmer for 2 more minutes.
Transfer to a bowl.
Method to make the Stuffed Bread Omlette
Crack open the Eggs into a mixing bowl. Add chopped Dhania leaves, Pepper Powder, Green Chilli, Onion, Haldi Powder and Salt. Mix well. Add Milk.
Whisk it well.
Toast the Bread Slices.
Place a Bread Slice on a flat surface, spread some filling on it evenly and cover with another bread slice.
Heat a non-stick pan with some oil. Pour some Egg mix and spread it evenly all over the pan by shaking and rotating the pan.
Place a sandwich in the middle and leave for 30 seconds.
Fold the Omlette from all the four slides like an envelope. Press it well.
Flip it and cook the other side for a few more seconds.
Done! Transfer to a serving plate, slice it diagonally and serve.
It is a very tasty breakfast and can also be served as an evening snack.
