Sweet Kozhukattai is a south Indian dish which is generally prepared on festive occasion like Vinayagar Chaturthi (Ganesh Festival). It is a very healthy snack and a favorite snack for the kids
Ingredients
Rice Flour – 2 cups
Jaggery / Gur – 1 ¼ cups
Grated Fresh Coconut – ½ cup
Cardamom (Elaichi) Powder – 1 tsp
Ghee – 2 tsp
Water – 2 cups
Method
Heat a pan. Dry roast the Rice Flour in medium flame till the aroma emanates. Transfer it to a bowl.
In the same pan, add water and Jaggery and bring it to a boil. Strain it to remove the impurities.
Rinse the pan and heat the Jaggery water. Add Grated Coconut, Cardoman Powder and the Ghee. Mix well. When it starts boiling, simmer it.
Add the roasted Rice Flour gradually and mix it evenly (with the back of a wooden spoon or a rolling pin) so that lumps are not formed.
Continue to stir till the dough leaves the sides of the pan and comes together as one single lump. Transfer it to a bowl and allow it to cool.
When it becomes cool, knead it to soft dough. Grease the hands with oil or Ghee. Take a small portion of the dough and press gently with the finger.
Place them in a steamer and steam for 10 minutes.
Serve them when they are medium hot.
Notes:
Quantity of water may have to be varied depending on the quality of the Rice Flour. Some Rice Flour may require less water and some may require more water.
