Spring Onion Curry with Tomatoes is another simple and easy to cook dish. When you buy spring onions from the market, just place the lower part of the spring onions with the roots in a cup of water. You will get fresh spring onions in days that you can keep using to make dishes like this. Just cut the spring onion very close to the root and put back in water to regrow again! This particular dish goes very well with Roti, Rice etc. You can also spread this on Dosas and serve as a tasty twist on your regular Dosa. You can also stuff it in between breads and serve as a tasty sandwich.
Ingredients:
Spring Onion – 1 bunch
Oil – 2 tbsp
Mustard Seeds – ½ tsp
Urad Dal – 1 tsp
Channa Dal – 1 tsp
Garlic – 5 pods (crushed)
Chopped White Bulbs of the spring Onion – 1 cup
Finely Chopped Spring Onion Greens – 1 ½ cup
Tomato – 2 (Finely Chopped)
Red Chilli Powder – 1 tsp
Coriander Seed Powder – 1 tsp
Turmeric Powder – 1 pinch
Garam Masala – ¼ tsp
Salt – as required
Method:
Heat the Oil in a pan. Add Mustard Seeds, Urad Dal and Channa Dal one by one. Stir them for a few seconds.
Add the chopped white bulbs of the Spring Onion. Cook for 2 minutes in medium flame. Add Tomatoes, Chilli Powder, Coriander Seed Powder, Turmeric Powder and Salt. Mix well and cook for 2 minutes covered with a lid in low flame.
Add the chopped Spring Onion Greens. Add ¼ cup of water. Mix well and cook for 4 to 5 minutes covered with a lid. Add Garam Masala and cook for a minute.
Transfer to a serving bowl. Serve with Roti, Chappati, Rice etc.
