Spinach and Sweet Corn make a good combination because of the light bitterness of the Spinach contrasting with the sweetness of the Corn. This dish is a dry dish. We can serve it with Roti and Rice. We can also make a roll with this dish to pack in the tiffin box.
Ingredients:
Cleaned and chopped Palak (Spinach) – 2 cups
Fresh or Frozen Sweet Corn – ½ cup (Parboiled)
Oil – 2 tbsp
Cumin Seeds – 1 tsp
Finely Chopped Onion – ¼ cup
Red Chillies – 2 (chopped)
Garlic – 4 pods (crushed)
Red Chilli Flakes – ½ tsp
Roasted Sesame – 1 tbsp
Bread Crumbs – 3 tbsp
Salt – to suit one’s taste
Method:
Heat the Oil in a pan. Crackle Cumin Seeds. Add Onions, Green Chillies, and Garlic. Stir cook. When the Onion turns pink, add the Palak and cook for 5 to 6 minutes till the Palak is done. Add the parboiled Sweet Corns, Salt and the Red Chilli Flakes. Cook for 3 to 4 minutes.
Add the Bread Crumbs and the Sesame. Stir for few seconds.
Transfer to a serving bowl. Serve with Roti, Rice etc.
Note:
While cooking any Green Vegetable, add the Salt only when the vegetables are cooked well. The volume of the green vegetable will reduce while cooking; it is easy to assume how much Salt is required at that stage.
