The true meaning of Cutlet as per the dictionary is small pieces of vegetables, nuts, fish, or meat that have been pressed into a round flat shape. But we will look at the Soya Cutlet here which is made of Soya Chunks or Soya Granules. Generally Cutlets are loved by all. And Soya Cutlet is a very healthy and tasty evening snack due to the high protein content in the Soya. Even though the taste of Soya is not liked by some, you will not get this taste when this is made into a Soya Cutlet. Soya Cutlet can be served as an evening tea time snack, if necessary, with chutney or Tomato Sauce etc.
Ingredients:
Soya Chunks – 1 cup
Oil – 1 tbsp
Ginger – 1 inch long piece
Potatoes – 1 cup (boiled and mashed)
Garlic – 6 pods
Green Chillies – 3 (chopped)
Red Chilli Powder – ½ tsp
Coriander Seed Powder – 1 tsp
Turmeric Powder – 1/8 tsp
Salt – to suit one’s taste
Garam Masala – ½ tsp
Chat Masala- 1 tsp
Finely Chopped Cilantro (Coriander Leaves)- ¼ CUP
Roasted and coarsely ground Pea Nuts – 2 tbsp
Maida (All Purpose Flour)- 3 tbsp
For Coating:
Bread Crumps – 5 tbsp
Oats Powder – 2 tbsp
For shallow frying of the Cutlets:
Oil – 3 to 4 tbsp
Method:
Soak the Soya Chunks in hot water for 30 o 40 minutes. Wash and rinse them well twice or thrice to remove the raw smell of the Soya. Squeeze the chunks well and remove the water.
Take it a mixer jar and grind it to a coarse structure. Keep aside.
Heat a tbsp of Oil in a pan. Add the crushed Ginger and Garlic and also the Green Chillies. Stir cook for 30 seconds.
Add the Red Chilli Powder, Coriander Seed Powder, Turmeric Powder, Salt and Garam Masala. Stir for a minute.
Add the crushed Soya Chunks. Mix well with the Masala above. Add Chat Masala. Add the boiled and mashed Potatoes. Mash it with a Potato Masher. Switch off the flame and allow them to cool.
Add Cilantro and Peanuts. Mix well. The dough for the Soya Cutlet is ready.
Take the Maida in a bowl. Add required water and make thin slurry.
Make small round or oval shaped pattices from the dough what we made. Dip it each of them in the slurry and then dip it in the Bread Crumps and Oats mixture. Ensure that both the sides of the Pattice are coated evenly with the mixture. Keep them aside for about ten minutes.
Heat the 3 to 4 tbsp of Oil in a non-stick pan. Shallow fry the patties / Cutlets in the oil till both the sides of the Cutlets turn golden brown.
Serve hot with Tomato Sauce or Green Chutney.
