Sindhi Gobi Potato / Aloo Gobi

Sindhi Gobi Potato / Aloo Gobi

This recipe is from the Sindhi cuisine.  Potato and Cauliflower pieces are fried and then seasoned with spices. It is a very tasty recipe that goes well with rice, roti, chapatti etc.

Ingredients

Potato Medium Sized – 2

Cauliflower Florets – 1 ½ cup

Oil – 1 tbsp + 1 ½ tbsp

Crushed Ginger Garlic – 1 ½ tsp (Ginger – 1 inch long piece and Garlic Cloves – 6)

Green Chilli – 2 (finely chopped)

Tomato Big Sized – 1 (finely chopped)

Coriander (Dhania) Powder – 1 tsp

Red Chilli Powder – 1 tsp

Cumin Powder – ½ tsp

Garam Masala – ¼ tsp

Cilantro (Dhania Leaves) – 2 tbsp (finely chopped)

Salt to taste

Method

Wash and pat dry the Cauliflower Florets and Potato.

Heat 1 tbsp of Oil in a pan. Roast Cauliflower and Potato till they become golden brown. Transfer to a bowl and Keep them aside.

 

Heat 1 1/2 tbsp of Oil in the same pan. Add crushed Ginger Garlic and stir them for a minute in medium flame.

 

Add Green Chillies and Tomato and Salt. Cook till the Tomato becomes soft.

 

Add Coriander Powder, Chilli Powder and Cumin Powder. Mix well and add 1 ½ cup of water and cook for 2 to 3 minutes.

Add the fried Potato and Cauliflower. Add Garam Masala.

Mix well so that the Garam Masala coats the Potato and Cauliflower evenly. Close with a lid and simmer for 2 to 3 minutes in low flame till it becomes dry.

Add chopped cilantro and mix well.

Done!
