Schezwan Fried Rice is from the Indo Chinese Cuisine. Schezwan Sauce is the main ingredient which gives this Fried Rice a deep spicy chilli garlic flavor. The Schezwan Sauce can be prepared at home and used for 3 to 4 weeks. If this dish (Schezwan Fried Rice) is to be prepared for a group of people for a party or get together, the rice can be cooked on the previous day and stored in the refrigerator. Cut the vegetables also in advance and store in the refrigerator. If advance preparation as above is done, the Schezwan Fried Rice can be prepared in 10 minutes.
Ingredients
Fluffy Rice – 1 bowl
Sesame Oil or any cooking oil – 2 tbsp
Chilli Flakes – ¼ tsp
Garlic– 1 tbsp
Shredded and finely chopped Cabbage – 3 tbsp
French Beans – 3 tbsp
Green and Red Capsicum – 2 tbsp each (finely chopped)
Spring Onion – 4 tbsp (finely chopped)
Schezwan Sauce – 3 tbsp
Pepper Powder – ¼ tsp
Natural Vinegar – 1 tsp
Method
Heat the Oil in a pan. When it is hot, add the Chilli Flakes. Add Garlic in another 5 seconds. Sauté for 15 to 20 seconds. Add all the vegetables except Spring Onion. Stir fry in high flame. Keep stirring and tossing continuously.
When the vegetables are half done, add the Spring Onion keeping aside a small quantity for garnishing. Cook the vegetables till they become crunchy.
Add the Schezwan Sauce. Stir well.
Add the cooked Rice in sections tossing gently the rice all the time. Avoid breaking the rice by rigorous tossing. Add Salt if necessary, pepper and the vinegar. Mix gently so that the sauce and vegetables mix well with the rice.
Garnish with Spring Onion and serve.
Note:
Rice must be stiff and the grains must be separate. (Nor mashy or lumps).
Salt is in the Schezwan Sauce and so, add Salt to suit taste only.
Sliced Mushrooms can also be used while cooking.
Increase quantity of Schezwan Sauce to increase Spiciness. Add ¼ tsp of Pepper which would increase the spiciness.
