There are days when you have cooked extra rice or have leftover rice from a restaurant takeaway. You can use it to make tasty Cutlets and serve as an evening snack/appetizer with a cup of Tea or Coffee. It is a crispy snack and easy to make.
Ingredients:
Steamed Rice – 1 cup (Fresh or Left over)
Boiled Potatoes – 2 (cooked and mashed)
Grated Carrot – 2 tbsp
Grated Ginger – 1 tsp
Green Chillies – 2 (finely chopped)
Medium sized Onion – 1 (chopped)
Chopped Coriander Leaves – ¼ cup
Red Chilli Powder – ½ tsp
Garam Masala – ¼ tsp
Turmeric Powder – 1 pinch
Coriander Seed Powder – ½ tsp
Amchur Powder – ½ tsp
Salt to taste
Roasted Gram Flour – 2 tbsp
Oil – for shallow frying (Approx. 2 to 3 tbsp)
Method:
If you are using left over Rice, microwave it for a minute. Mash the Rice with a spoon when the Rice is hot.
Add all the spices and Salt to the Rice. Mix then well with your hands.
Add Roasted Gram Flour and mix again.
Make cutlets from this mixture.
Heat the Oil in a non – stick pan.
Shallow fry the Cutlets till they turn crispy on both the sides.
The cutlets are ready for serving. You can serve Ketchup or any Chutney to go as a combination, if required.
