Dum Aloo is a very popular dish liked by everyone. Almost all the restaurants would have this dish in their menu. Generally it is made with deep fried Baby Potatoes. Its rich and creamy gravy is loved by all. You will see how it is cooked with Cashew Paste, Cream and Curd to make this gravy. You can serve it with Roti, Chappati, Steamed Rice or Jeera Rice etc.
Ingredients:
To roast Baby Potatoes:
Baby Potatoes – 15 to 20 (Boiled and Peeled)
Oil – 1 tsp
Salt – 1 pinch
Red Chilli Powder – 1 pinch
For Gravy:
Oil – 1 tsp
Onion (medium sized) – 2 (chopped)
Green Chilli – 1
Cinnamon Stick – 1 small piece (1/2 inch long – I used rolled Cinnamon)
Green Cardoman – 2
Maze – few strands
Large Tomato – 1 (chopped)
Cashew – 10
Other Ingredients:
Oil – 2 tbsp
Red Chilli Powder – 1 tsp
Turmeric Powder – 1/8 tsp
Coriander Seed Powder – 1 tbsp
Salt – to suit taste
Home Made Kasoori Methi – 1 tsp
Yogurt – 2 tbsp
Coriander Leaves – 2 tbsp
Fresh Cream – 2 tbsp
To Garnish:
Fresh Cream and Coriander Leaves
Method:
Heat a tsp of Oil in a pan. Add Chilli Powder and one pinch of Salt. Stir well.
Add the boiled and peeled Potatoes.
Roast them till they turn golden all over. It takes about 4 to 5 minutes. Transfer to a bowl and keep aside.
In the same pan, heat one tsp of Oil. Add the Onion, Green Chilli, Cinnamon Stick, Green Cardoman and maze. In medium flame, sauté them for 2 minutes.
Add chopped Tomatoes and Cashew.
Cook till the Tomatoes become soft. Allow to cool. Grind it to a fine paste. Add water, if required.
Use the same pan which you used for sautéing the Onion. Heat 2 tbsp of Oil. Add the Onion, Tomato and Cashew Paste and cook them in low to medium flame for 2 to 3 minutes.
Add Chilli Powder, Coriander Seed Powder, Turmeric Powder and Salt. Cook till the Masala becomes thick.
Add 1 to 1 1/2 cup of water (or as required). Simmer for 4 to 5 minutes in medium flame.
Add the roasted Baby Potatoes. Crush the Kasoori Methi with hands and add to it. Simmer the gravy for 3 to 4 minutes.
Whisk the Yogurt and add it to the gravy. Stir well. Add the Coriander Leaves. You can add little water to adjust the consistency. Adjust Salt.
Transfer to a serving bowl. Garnish with Coriander Leaves and fresh Cream.
Note:
If you do not have Baby Potatoes, use regular Potatoes. Boil, Peel and cut into cubes. Roast the cubes in Oil with Red Chilli Powder and Salt. And follow the method thereafter as above.
