Ingredients:
Pumpkin: 300 g
Green chilly: 1 slit
Turmeric powder: ¼ tsp
Chili powder: ½ tsp
Cumin powder: ½ tsp
Salt to taste
To temper:
Oil: 2 tsp
Mustard seeds: ½ tsp
Black gram/urad dal: ½ tsp
Red chilly: 2 broken
Asafoetida/hing: a pinch
Curry leaves: 8-10
Cilantro: 2 tbsp
Method:
Peel the hard skin of the pumpkin. Cut into small pieces and wash well.
Heat oil. Add mustard seeds and allow it to splutter. Add the black gram/urad dal and cumin seeds. Stir for few seconds and add curry leaves, red chilly and asafetida. Stir for a few minutes.
Add the pumpkin. Stir cook for few minutes. Add salt and turmeric powder. Cover and cook for 5 mins on medium heat.
Then add chili powder and cumin powder. Mix and cook for 2 minutes. Pumpkin should be of a soft consistency by now. Add cilantro.
