We get fresh and tender Radishes in winter season. So, winter is the right time to make this Radish Greens Stir Fry. We know that Radish has lot of health benefits. But, the leaves (Greens) of Radish have much more health benefits compared to the Radish itself. In this dish, I used the stems as well since they were very tender. If they are not tender, do not use the stems. I chopped the stems very finely, cooked them first and added to the chopped green.
Ingredients:
Radish Greens – 1 bunch
Oil – 2 tbsp
Mustard Seeds – ½ tsp
Urad Dal – 1 tsp
Red Chillies – 2 (broken)
Onion – 1 (finely chopped)
Curry Leaves – from 1 sprig
Salt to suit taste
To grind:
Grated Coconut – ¼ cup
Red Chillies – 2
Garlic – 2 pods
Cumin Seeds – ½ tsp
Method:
Wash the Greens. Cut off the stems from the Greens and chop them finely and keep them separately. Chop the Greens finely and keep aside.
Grind the Red Chillies, Coconut, Garlic and Cumin Seeds coarsely.
Heat the Oil in a pan. Add Mustard Seeds and Urad Dal. Allow the Mustard to crackle. Add Red Chillies and stir fry for a few seconds. Add the Onion and Curry Leaves. Stir cook till the Onion become translucent.
Add the finely chopped tender stems of the Radish. Cook them in low flame covered with a lid for 5 to 6 minutes till it becomes soft.
Add chopped Green Leaves. Cook till the leaves are cooked well. Add Salt and the crushed Coconut.
Mix well and cook for 2 to 3 minutes more.
Transfer to a serving bowl.
Note:
You can use leaves of red Radish also.
