Ingredients:
Potato: 2 cooked
Sambhar powder: 2 tsp
Chili powder: 1 tsp
Cumin powder: ½ tsp
Turmeric powder: ¼ tsp
Garam masala: ¼ tsp
Cilatro leaves: 4 tbsp finely chopped
Salt to taste
To temper:
Oil: 1 and ½ tsp
Mustard seeds: ½ tsp
Cumin seeds: ½ tsp
Onion: 1 finely chopped
Green chillies: 1 finely chopped
Ginger: 1” grated
Method:
Peel and crumble the potatoes gently.
Add all the powder spices listed in the ingredient list with salt and mix it gently. Do not make it mushy.
Heat oil in a pan. Add mustard seeds. Once they crackle, add cumin seeds and stir for 30 secs.
Add onion, green chilies and ginger and cook till translucent.
Then add the potato mixture and cook for 5 mins (stirring gently) on medium flame.
Add cilantro leaves and cook for a minute.
Done!
Goes deliciously well with curd rice or rasam rice.
