Oats Upma is a healthy breakfast recipe with fresh vegetables and Indian Spices. It is another quick to make recipe and a healthy dish. You can serve it with Coconut Chutney and Green Chilli which enhances its taste.
Ingredients:
Rolled Plain Oats – 1 cup
Mustard Seed – ¼ tsp
Black Gram Lentil (Urad Dal) – ½ tsp
Bengal Gram (Chenna Dal) – ½ tsp
Onion – 1 (finely chopped)
Finely minced Ginger – ¾ tsp
Green Chilli – 1 (sliced)
Curry Leaves from 1 or 2 twigs
Lemon Juice – ½ tsp
Salt to taste
Finely Chopped Carrot – ¼ cup
Frozen or Fresh Green Peas – ¼ cup
Fresh Grated Coconut – ¼ cup
Finely Chopped Coriander Leaves – 1 tbsp
Method
Heat 1 spoon of Oil and roast the Oats in medium flame for 2 to 3 minutes and keep the Oats aside.
Heat the remaining Oil or Ghee in the same pan. Add Mustard and allow it to crackle. Add Urad Dal, Channa Dal and Curry Leaves. Stir for 30 seconds. Add the Onions, Green Chilli and Ginger. Sauté till the Onion become translucent.
Add Carrot and Green Peas. Sauté them for 3 to 4 minutes in medium flame.
Add the roasted Oats and salt. Mix well. Add 3 to 4 tbsp of water. Stir well and cover and cook in low flame for 5 to 6 minutes stirring in between.
Add grated Coconut and Coriander leaves. Add Lemon Juice. Stir for 30 seconds.
Serve hot.
Notes:
If you want the Oats Upma to be mushy, add about ½ cup of water and cook well.
