We make different Sundal Recipes for Navaratri. I have already posted a different variety of Sundal recipe. Matki Sundal is one more in that series. You can have this Sundal as a snack or side dish. It can be prepared as an accompaniment with lunch dishes also. Moth bean boosts the blood supply and is rich in Vitamin A, Iron, Zinc and Vitamin K. It is a good source of anti-oxidants. If you use Moth Bean Sprouts, the nutrition value would increase.
Ingredients:
Matki (Moth Bean) – ½ cup
Oil – 1 tbsp
Mustard Seeds – ¾ tsp
Urad Dal – 1 tsp
Green Chillies – 2 (sliced)
Curry Leaves – from 1 twig
Grated Coconut – 3 to 4 tbsp
Grated Ginger – 1 tsp
Chilli Flakes – ¼ tsp
Raw Mango (peeled and chopped) – 2 tbsp
Salt – to suit one’s taste
Finely chopped Cilantro – 2 tbsp
Roasted and coarsely crushed Peanuts – 3 tbsp
Method:
Soak Matki (moth Beans) in water over night.
Drain the water. Add Salt and 4 to 4 tbsp of water. Mix well. Cook it in pressure cooker for 2 to 3 whistles till the Moth Bean is done. It must be cooked soft, not mushy. (You can boil the beans in advance and keep it ready also)
Heat the Oil in a pan. Add Mustard Seeds, Urad Dal, Curry Leaves, Green Chillies and Ginger. Stir them all well for few seconds till the Aroma start releasing.
Add the grated Coconut, chilli flakes and the chopped raw Mango. Cook for 2 minutes. Add the cooked Moth Beans. Mix well and simmer for 2 minutes covered with a lid in low flame.
Add the chopped Cilantro and Peanuts. Mix well again.
Transfer to a serving bowl.
