Do not have the time to grind and ferment dosa batter? Do not fret! Mixed Vegetable Bread Uthappa is an instant Dosa which does not require fermentation like ordinary Dosa preparation.
Ingredients
Bread Slices – 4
Semolina (Rawa/ Suji) – 3 tbsp
Wheat Flour (Atta) – 3 tbsp
Yogurt (Curd/Dahi) – ¼ cup
Other Ingredients
Onion – 2 tbsp (finely chopped)
Grated Carrot – 2 tbsp
Tomato (Deseeded) – 2tbsp (finely chopped)
Capsicum – 2 tbsp (finely chopped)
Cilantro (Dhania Leaves) – 2 tbsp (finely chopped)
Green Chilli – 1 (finely chopped)
Cumin Seed (Jeera) – 1 tsp
Salt to taste
Preparation:
Trim the outer edges of the Bread Slices and discard. Crush the bread in a mixture. Add Semolina (Sooji), Wheat Flour, Salt and Curd. Add water and give a pulse grind to avoid lumps. Transfer to a mixing bowl.
Add all the ingredients under the “Other Ingredients“ column. Mix well. This batter should not be too watery and not too thick in consistency. If too thick, add water as necessary.
Heat a skillet over medium heat. Pour a ladle of the batter and spread evenly into a round shape. Spread oil around the Uthappa. Allow it to cook for a couple of minutes till it is possible to flip it.
Flip and cook for 2 more minutes. Both the sides of the Uthappa should become golden brown.
Uthappa is ready and is tasty on its own. Can also be served with Chutney or Sambar.
The quantity of ingredients mentioned is enough for making four Uthappas.
