Here is a masala Egg Bhurji which is different from the regular Bhurji.In this dish, the Eggs are not scrambled. Instead it will have chunks of Eggs with Tomato and few spices.
Ingredients
Eggs – 4
Oil – 4 tbsp
Mustard Seeds – 1 tsp
Black Gram / Urad Dal – ½ tsp
Cumin Seeds – 1 tsp
Onion – 2 (finely chopped)
Green Chilli – 2 (finely chopped)
Ginger Garlic Paste – 1 tbsp
Tomato – 4 (finely chopped)
Red Chilli Powder – 2 tsp
Coriander Seed Powder – 1 tsp
Turmeric Powder – ¼ tsp
Garam Masala – ¼ tsp
Coriander Leaves – 2 tbsp + 2 tbsp
Method:
Heat the Oil in a broad pan. Add Mustard and Cumin Seeds and allow them to crackle. Add Urad Dal. Stir for a few seconds. Add the finely chopped Onions, Green Chillies, and little Salt. Sauté those till the Onion become translucent.
Add Tomatoes, Chilli Powder, Coriander Seed Powder, Turmeric Powder and Salt. Mix well.
Cover the pan with a lid and simmer for 3 to 4 minutes in medium flame. Open the lid and mash the Tomatoes with a ladle.
Add ½ cup of water, 2 tbsp. of Coriander Leaves and Garam Masala. Mix well.
When it comes to a boil, break the Eggs into it. Cover the pan for a couple of minutes.
Open the lid. Fold the Eggs gently and mix them with the masala.
Stir cook till the Eggs are cooked well.
Add chopped Coriander leaves.
Mix and transfer to a serving bowl.
