Here is another great dish which is a very simple to make and great in taste. This Masala Baby Potato can be served with coffee and tea or also as a side dish with Curd Rice.
Ingredients:
Baby Potatoes – (Boiled and peeled) – 500 Gms
Oil – 2 tsp
Turmeric Powder – 1/8 tsp
Red Chilli Powder – 1/8 tsp
Salt to suit taste
Ingredients for the Masala:
Oil – 2 tbsp
Finely chopped Onion – 1 cup
Curry leaves – from two twigs
Ginger Garlic Paste – 1 tsp
Tomatoes (medium sized) -2 (crushed)
Coriander Seed Powder – 1 tsp
Red Chilli Powder – 1 tsp
Turmeric Powder – 1 pinch
Salt – to suit taste
Finely Chopped Coriander Leaves – 3 tbsp
Method:
Prick the boiled and peeled Baby Potatoes with a fork randomly. Heat a tbsp of Oil in a pan. Add the Baby Potatoes. Sprinkle Chilli Powder, Turmeric Powder and Salt on them.
Toss and roast the Potatoes till it becomes golden brown and spots start appearing on the surface. Transfer to a plate and keep aside.
In the same pan, heat 2 tbsp of Oil. Add the Onions and Curry Leaves, Sauté the Onions till they turn translucent.
Add the Ginger Garlic Pate. Cook for a minute in medium flame.
Add the crushed Tomatoes, Coriander Seed Powder, Chilli Powder, Turmeric Powder and Salt.
Cook till the gravy becomes thick. It takes 4 to 5 minutes approximately.
Add the roasted Baby Potatoes. Mix well.
Add 1.2 cup of water.
Cook till the water evaporates completely. Add the chopped Coriander leaves.
Mix and serve.
Note:
If you do not have Baby Potatoes, use regular Potatoes. Boil, peel and cut into cubes. And use them in place of Baby Potatoes.
