Summer is setting in and the Mango season has begun. So, a perfect reason to make a recipe with Mango as the main ingredient. Mango Coconut Burfi is a very delicious sweet dish. You can adjust the quantity of Sugar depending on the sweetness of the Mangoes. Use sweet non fibrous Mangoes like Alphonso, Kesar etc.
Ingredients:
Full Cream Milk 1 litre
Basmati Rice – 3 tbsp (soaked in water for an hour)
Sugar – ¼ cup
Mango Pulp – 1 cup
Dry fruits (sliced and chopped) – as required
Method:
Drain the water from the soaked Rice. Grind it to a coarse paste. (You can add little milk while grinding to help grinding to a paste). Keep aside.
Boil the milk in a broad vessel or pan. Simmer for 10 to 15 minutes stirring occasionally. Adjust the flame till the milk level reduces a little.
Add the Rice paste gradually stirring continuously. Cook for 5 minutes stirring continuously so that no lump is formed and the rice paste is cooked well and turns thick and creamy. Add Sugar and cook for 2 to 3 minutes till the Sugar melts completely. Add half of the dry fruits. Mix well. Cook for 2 minutes. Switch off the flame. Add the Mango Pulp. Mix well. Transfer to a serving bowl. Garnish with Dry Fruits. The tasty Mango Phirni is ready. Chill and serve so that the taste gets enhanced.
