This recipe is for the EGG lovers. Broccoli is added to the Eggs to make it a protein rich healthy dish. Broccoli is a vegetable packed with many essential nutrients. It is a rich source of Vitamin A, C, K, Iron, Zinc, Prosperous, and phyto nutrient. Phyto Nutrient lower the risk of developing Diabetes, heart diseases and some particular type of cancers. Egg is rich in protein along with iron, minerals and Vitamins. We can serve this dish with Roti, Rice etc. You can even serve it for breakfast with a whole wheat toast!
Ingredients:
Broccoli – 1 (medium sized)
Eggs – 2
Oil – 2 tbsp
Medium sized Onion – 2 (finely chopped)
Green Chillies – 3 (finely chopped)
Grated Coconut – 1/3 cup
Turmeric Powder – 1 pinch
Black Pepper Powder – ½ tsp
Garam Masala – 1 pinch (optional)
Salt – to suit taste
Method:
Soak Broccoli in water with Salt and Turmeric Powder for at least 30 minutes. Drain the water. Chop the Broccoli finely and keep aside.
Finely chop the stems portions also and keep aside.
Heat the Oil in a pan. Add the Onions and Green Chillies. Stir cook them with a pinch of Salt till the Onion becomes translucent.
Add the finely chopped stem. Mix well and simmer for 2 minutes covered with a lid.
Now, add the grated Coconut and Turmeric Powder. Stir well. Simmer for 4 to 5 minutes covered with a lid in low flame.
Add the finely chopped Broccoli. Mix well. Arrange the ingredients to make space in the center of the pan. Break and add the Eggs in that space. Scramble the Eggs in that space. And then mix with the vegetables. Add Salt. Mix well. Place the lid and simmer for 2 to 3 minutes. Add black pepper powder and garam masala and give it a final stir.
Transfer to a serving bowl.
