Lemon Poha is a simple breakfast recipe similar to Lemon Rice. The difference is that we use Poha instead of rice. It is a great dish for lunch box, picnics and travel. You can serve it as an evening snack as well. It tastes great because of the crunchy peanuts and tangy lemon.
Ingredients:
Flattened Rice (Poha / Aval) – 2 cups
Oil – 2 tbsp
Mustard Seeds – 1 tsp
Urad Dal – 1 tsp
Channa Dal – 1 tbsp
Raw Peanuts – 2 tbsp (optional)
Cashews – 8 to 10 (optional)
Red Chilli – 2 (broken)
Grated Ginger – 2 tsp
Green Chillies – 2 (Finely Chopped)
Asafoetida – – 1/8 tsp
Turmeric Powder – ½ tsp
Salt – to suit taste
Grated Coconut – 3 tbsp (optional)
Coriander Leaves – 3 tbsp
Lemon Juice – 3 to 4 tbsp
Method:
Take Poha in a strainer and rinse under running water for 30 to 40 seconds. Keep aside. The water will drain away.
In the meanwhile, heat Oil in a deep shallow pan. Add Mustard Seeds, Urad Dal and Channa Dal and wait for the seeds to splutter. Add Peanuts, Cashew Nuts and broken Red Chillies. Roast them in low flame till the Peanuts turn crisp.
Add Ginger, Green Chillies, Curry Leaves and Asafoetida. Stir them for a minute. Add Salt and Turmeric Powder. Add the Poha (flattened Rice) and mix well so that the Poha mixes well with the tempering – in low flame. (If you feel that the Poha has become too dry, sprinkle 3 to 4 tbsp of water and cook).
Add the grated Coconut and mix well. Switch off the flame.
Add the Coriander Leaves and Lemon Juice. Mix well.
Serve hot. Or pack it in a lunch box.
Note:
Adjust the quantity of Lemon Juice to suit the tanginess to your liking.
